The pit will most likely never grow any fruit. (having toured many avo orchards in a prior life, in Ojai and further south). They take anywhere from 5 - 7 years to fruit, and bear heavily every other year or so. Hass avos have the highest oil content, so they are the preferred variety for foodservice. The freezing comments are spot on. Try to purchase the Hass so they will perform the best for you during the freezing process. Bacons, Fuertes, Pinkertons, and the Florida variety (who's name escapes me right now) are poor for home processing.

Hey all, I planted 3 avocados last year. Haas, Fuerte and Bacon., We thought a bit of variety would be nice. I bought those trees at Lowe's and I figured they were only 1 to 2 years old. Well two of the trees have 1 avocado on them. yes I know it's only 1 but I am very excited.

I bought some guac at the store once and froze it. It came vacuum sealed so I imagine that helped. It was real guac with only ascorbic acid to prevent browning. I would definitely add a bit of lemon when you mash it.

I used to do freezer cubes for my babies. The top layer browned a bit but they were still good.

My aunt used to live in Los Angeles. She had a huge avocado tree in her yard and they were delicious, better than Haas. Even the small ones that didn't get fertilized were good to eat.

I have had avocados sprout and grow into little trees in my compost. When I lived in the San Francisco Bay area one that grew in my compost between two small buildings had flowers on it the 3rd year. Unfortunately we had to move before we could get any fruit.
Now I keep trying to grow one big enough, but we keep having freezes :(
