What about a thick sliced brandywine setting beside scrambled eggs and sausage?

. . . I'm gonna go talk to the tomatoes in the greenhouse and give them some growth talk hormone :gig

When I am peeling my tomatoes to can I place them in the boiling water until the skin splits. Then I take the hot tomatoes and place them in a colander over a mixing bowl until they are cool enough to peel. I peel and trim them over a second colander set up in the same manner. This accomplishes several things. First any juice lost while they cool I catch. Any juice spilled when peeling, coring and cutting I catch. While they are waiting in the colander they do lose a little of their juice, which actually makes a nicer product for canning with more pulp per jar.

All of the extra captured juices are heated up with a little salt, pepper and just a tad of lemon juice to ensure the proper acidity for good safe canning. It is like a bonus product from a regular canning procedure!

Quite yummy on a cold snowy day like today! It is like summer in a jar.:D

I think I will can some green tomatoes this summer. I don't particularly care for FGT, but my oldest boy does, so I want to can some for him to have next winter.

I have frozen them for that purpose before. They are not as good as the real thing.

I can imagine. But then, what is?

I intend to can corn this year instead of freezing it, as it takes up too much room in my small freezer.

Do any of you grow corn? What kind do you grow? Do you can it or freeze it. We only could can it when I was growing up and I must say I prefer the canned to freezing, any day!

I've been growing Ambrosia, but might try Peaches 'N' Cream this year just for kicks and giggles.

We freeze our corn. We grow Peaches & Cream & Silver Queen. I promise the Silver Queen is so good, you can eat it raw. (I have many times out in the garden ;) )

I also did green tomato pickles last year. They go great paired with a helping of pinto beans.
