I also add lots of onion and garlic, worcestershire sauce, and.........soy sauce. :hide I love it on any meat.

Great stew ideas. This will give me some options to change mine up a bit. I had a recipe once that called for parsnips and red wine. It had great flavor.

I always start with caramelized onions, celery and garlic cooked in butter. Then I also brown the meat well...also in butter. If I have bone broth on hand, that gets added instead of water. I also add a glug of red wine or balsamic vinegar. Sometimes I throw in some dried hot peppers. For spices, rosemary, sea salt, and pepper are standard. No blandness in my stew :D

Chuck meat, beef broth, onion, garlic, carrots, potatoes, soy sauce, worcestershire sauce, dash of ketchup, parsley, half a cup of quality cabernet or other good dry wine from California, flour rue to thicken the gravy, serve over rice. Yum!

yes I use a few bay leaves also. never used rosemary like WZ said....not a rosemary taste fan actually lol

Kitchen Bouquet is my favorite seasoning/enhancer to use. It gives a rich flavor and dark brown color to beef stews, sauces and gravies. I just checked the label: besides vegetables and spices, it has sodium benzoate (less than 0.1 of 1% for freshness). If you have never used it, I highly recommend it.

kitchen bouquet is not available in NC

I grew up with that in Jersey...Mom used it all the time for gravies, stews like you said, but sadly, here I don't get it.....but I guess I could go online and order a case LOL and mail it to me. probably alot in a case tho :p

edited to say tho my brother just came down from Jersey and brought us a few Taylor Hams. We can't get those here either, never thought of having him bring kitchen bouquet LOL---will be on the next list and next visit :lol:
