How about hot cooked cereal? I do a mix of whatever I have and then add the same volume x 1 1/2 in water, then cook until soft. Here are some things I mix:

Quinoa, millet, cracked wheat, groats, cornmeal, flax, brown rice, wild rice and others. So, if I start with 2 cups of mix, I add in 3 cups water and cook until the hardest ingredient (usually the wild rice) is soft. My kids LOVE this with brown sugar, honey or maple syrup on top. I usually add eggs or venison sausage for some protein.

How about cornbread and eggs? Polenta with cheese? Swiss chard quiche? How about fried potatoes, onions and eggs?

I'm getting hungry now. :drool

I make a sort-of Muesli that I enjoy in the summer with yogurt. I toast flaked grains in the oven - I use a mix of oat, wheat, barley, and rye flakes, but any one, or mixture of those would work as well. I spread them out on a cookie sheet, and toast them in a low oven for about 20 minutes, until they smell toasty. I often throw in some sunflower seeds, and/or nuts if I have them. I let this cool down before mixing in some raisins, or other dried fruit. I store it in a glass jar, and eat it with yogurt, but milk would do if preferred, and some fresh fruit, if I have it. Sort of a hybrid granola/Muesli. I make it with about 8 cups of flakes at a time, and it lasts for quite a while. I prefer it to the untoasted, original version of Muesli.

What about mini-pizza's? Make ahead and freeze. I used to do this when I was single, I would make a huge batch of single-serve pizza's and freeze them on a piece of cardboard lined with foil and bag them. Then I would slide the foil onto the oven rack, or the toaster oven at work, right from the freezer, it was wonderful!

I also made a version without sauce, just the dough, sharp cheddar, and chopped brocolli florets. That was soooo good, too.

I think they cooked in about 20 minutes, if I remember correctly.

MTN- yes, I've made both the grapenuts and muesli. I like them both, but I make the muesli most often, because I can make just enough for the two of us. I make the muesli with yogurt for me, but dh prefers the sweetened condensed milk version.

I agree with me&thegals - any grain can be cooked as a nutritious cereal. On Wednesday, we had 8 grain cereal (hard red wheat, white soft wheat, oats, rye, barley, triticale, millet, quinoa) to which I added some bulgur and some coarse corn meal. I get the 8 grain cereal from my local Amish store for $1.49/pound. The grains are rolled or flaked. Any left over cereal goes to the chickens.

For the fruity baked oatmeal recipe I posted, I have used other fruits or just one fruit, if I didn't have the ones in the recipe.

We like peanut butter on toasted whole grain bread for breakfast on work days. It's quick and gives us protein to start the day. But occasionally, I will make Scotch Eggs the night before an "out the door fast" morning, as they can be eaten hot or cold.

My dh likes corn fritters and sausage links for breakfast. If I make my yeast dough corn fritters recipe, a batch makes 100 fritters and I freeze the extra (6 to a bag) and they can be reheated for a snack also.

SCOTCH EGGS
Hardboiled eggs in a sausage/oatmeal crust. Scotch eggs are delicious either hot or cold.

INGREDIENTS (makes 6)
6 eggs, hard boiled, shells removed

COVERING
1 lb sausage meat
1/2 cup rolled oats
1 Tbsp prepared mustard
1/4 tsp black pepper

COATING
1 cup bread crumbs
2 eggs beaten

Preheat oven to 375 F.

Make the covering: mix all ingredients thoroughly and divide into six portions.

Cover the eggs: uniformly cover each hard boiled egg with its portion of the sausage mixture.

Bread the covered eggs: roll each egg in bread crumbs, then into beaten egg, and once again in bread crumbs.

Set eggs on a cookie sheet and bake for 10 minutes. Turn them over and bake another 10 minutes. Can be served sliced in half.

Are you only doing plain pancakes? I love to do pancakes with my kids and we do all sorts of variations like banana chocolate chip, blueberry, pumpkin, apple butter, pumpkin butter, sweet potato. You can add just about anything to the batter to change it up.

We also do muffins, which are good cause you can make them the night before if you know that you are going to have a crazy morning.

I also love the breakfast burrito. We do a lot of breakfast for dinner things around here so sometimes we'll do leftovers for breakfast and kind of do a day in reverse---dinner for breakfast and breakfast for dinner.

Not much to add, just my kids love home made version of egg mcmuffins. You can freeze them but personally the egg is funky so I throw them together in the morning in about 10 minutes.
My kids love crepes with fresh fruit, and also fruit yogurt parfaits.
Muffins are a big hit here too!

I love my morning cereal but am trying to get away from eating it so often. The one thing that works for me is to eat dinner leftovers.

I like a banana with peanutbutter, toast with peanutbutter and toast w/pb and maple syrup. Hmmm...I think I see a common theme here. :D

Don't tell the kids, but my favorite breakfast is ice cream, cookies, or candy.

OK, altho this recipe uses store bought cereal...it lasts a LONG time in the fridge.
Refridgerator Bran Muffins
2 cups BOILING water
2 Cups 100% bran cereal
Mix, and set aside to cool.
In another bowl...cream together ( Use the largest bowl you have,tupperware fix and mix bowls are great, they have seals)
1 Cup shortening
2 Cups sugar
4 beaten eggs
1 qrt(4 cups) buttermilk(IF you dont have buttermilk you can "make your own" 4 cups milk,4 Tablespoons Lemon juice, let stand 5 minutes)
in a 3rd bowl, combine 5 cups white flour and 5 tsp Baking soda.
Add the flour mixture to the creamed mixture(shortening,sugar and eggs) when mixed well...add 4 cups ALL BRAN cereal, mixing only untill moist then add your cereal/water mixture to this.
This will store covered in the refridgerator for up to 30 DAYS!!
TO PREPARE:
Drop a few large spoonfulls onto PAPER plate, and pop in the microwave for 1 - 2 minutes. It will "rise" and look "dry" when its done...as soon as you pull it out, spread with jelly, or jam, and enjoy. My kids LOVE this, and the dont realise they are getting all the bran and fiber. :p
