Just a question, have you ever boiled it down before? I am asking, couse a friend of mine said he has a ratio of approximately 30parts of sap to 1 part of syrup, and it is supper sweet... but he did warn me that it absorbs smells when being boiled down, so it may stink pretty bad if you have a strong smell in the kitchen like a lot of garlic, or something like that.

I just bought some local maple syrup yesterday. $15 a litre. It would have cost me $22 for the same amount in the grocery store. Never had birch syrup before. good luck on your venture!!

some other ways to use birch:

-leaves- there are some fancy words that I do not know the translation of, but you will probably do some research of your own if you will get interested. Basically it helps with the digestion process, bloodstream cleaning process, it has anti-rheumatic tendencies, makes you sweat and pee. you get the point, even tho I did ot use some high-end vocab;) leaves are used from silver birch and Downy Birch; also known as White Birch, European White Birch or Hairy Birch.

-bark- the white bark from the two above birch's is used for a variety of skin problems
-sap- obviously, syrup. What advantage it has over maple is, that once drilled, one hole will last you through the whole season. one tree will yield about 1/2-1
gallon of syrup.
