If you want to try this, its the way I was taught to fix butternut squash for the holidays.

I add nutmeg and a couple tablespoons of maple syrup or brown sugar.

If not during the holidays, butter salt/pepper to taste.

I still have four in my root cellar from last years harvest. All my squash did poorly this year so they weren't that big and aren't as sweet as they should be.

Most of my food storage is in my garage. The garage is under my house and the back wall has earth on two sides and stays pretty cool., My only concern is critters. That is why I was trying to think of something to store my squash in. I use cabinets for all my storage. Guess I will need to find something for squash as well.

Hey, BBH, I just saw this.

Sure, but be forewarned, I think it took a total of 3 hrs to make this. :p I used the no-bake noodles and they worked fine, but I layered it so that sauce was at the very bottom. :)

Squash Lasagna

1 large onion, chopped
3 lbs butternut or other winter squash, peeled, seeded, and cut into 1 cubes
2-3 cloves garlic, minced
olive oil
salt & pepper
8 oz smoked mozzarella
1 cup parmesean, grated
9-12 lasagna noodles, cooked
1 cup hazelnuts, toasted and chopped
1 Tablespoons fresh sage, chopped

Toss onion, squash and garlic with olive oil, salt, and pepper in a large roasting pan. Roast 450 F 35-45 minutes. Add hazelnuts and sage. Set aside.

3 Tablespoons unsalted butter
2 cloves garlic
5 Tablespoons flour
5 cups milk and/or cream
1 bay leaf

Melt butter in large skillet and saut garlic about 1 minute. Add flour, whisking to make roux. Pour milk in a steady stream, whisking continuously. Add bay leaf. Bring to boil and reduce to a simmer, stirring continuously for 10 minutes. Remove bay leaf.

Oil bottom of 9 x 12, deep baking dish. Cover with lasagna noodles, then squash, sauce, cheeses. Repeat several times, ending with cheeses. Bake covered in foil at 425 F for 30 minutes. Remove foil and bake for another 15 minutes.
