Can you mix raw milk from day to day milkings?

You may be able to tell a difference between milk that is fresh, and milk that is 1 week or more old.

Less than that, it isn't likely to matter.

The bacteria that culture at room temperature in fresh milk are different than the ones that culture at lower temperature in the fridge though. So you get buttermilk by leaving it out, you get a variation on that if you leave it too long in the fridge.

And if you pasteurize it, or freeze it first, then it will just turn nasty sour when it gets too old, in or out of the fridge. EE-YEEWWWWW!

I get less than 2 cups a day now. I don't mix until the newest batch is cooled. But I don't hesitate to do that. Then again the milk isn't exactly piling up arourd here these days :/
