Canning Butternut Squash

Thanks!! The canner is canning as I type!! I didn't get very much but at least the squash won't go bad. I suppose they would have been good in cold storage but this is good too.

This post is a little late since you're already canning the goods, but I'll share anyway.

I've not done squash like that before, but this year I did use pumpkins from our garden to make Tday pies, so I don't know if the process would be any different, but I cut the pumpkins in half, scooped out the seeds and strings then put them on a cookie sheet cut side down with a little water and baked in the oven with skins on till cooked. After they cooled a bit, I tried to pick up a piece and the skin came right off in my hand. It was so much easier than trying to peel raw.

Another excellent method! I use this one for my incredibly genormous 25+ pounders. Sometimes even that is too huge, so I cut them into wedges and scoop them out of the skin after cooking and cooling.
