Canning Fruit Recipes and how to's please??

Anyone interested in sharing some fruit canning recipes??? I'm a newbie to canning. Here's what I would like to know how to make:
Plum Jam/Jelly

Peach Jam/Jelly with the peels of the peaches cuz I wanna can the peach fruit as peach slices.

Applesauce, Applebutter, etc. anything else with apples.

I saw someone made Kiwi fruit jam - that looked cool!

Pretty much, any fruits you can think of to can/preserve as jams/jellies/pie fillings/ or as side dishes, etc. Please???? And as I try the recipes, I'd be willing to share how it goes!

I just froze a batch of cherry pie filling - 8 c drained cherries, 2 1/2 cups sugar, and 5 TBLs corn starch. Mix and let sit 30 min. Move to saucepan and heat until desired thickness. Put 2 cups (enough for 1 pie) in a zip-top bag and let cool for an hour or so. Seal and toss in the freezer. To use, thaw and put a pie shell, bake as normal. We do things simple-like. :hu

Simple is good for me! thanks for the cherry pie filling how to! :D

I could freeze some stuff, but only have the fridge freezer, so space is limited.

I also want to learn how to can elderberries - since we have a huge patch of them! :D

I just looked up in my Ball Blue Book. It looks like the recipe (page 18) for canning the berries is the same for all the berries you listed. I remember my mom doing this when I was a kid.

For canning berries for Baking

1 1/2 to 3 lbs of berries per quart

Simmer clean berries until hot throughout, adding just enough water to prevent sticking.

Add 1/4 to 1/2 cup sugar for each quart, stir and cook mixture slowly until the sugar dissolves.
Ladle into hot jars, leaving 1/2 inch head space. Add boiling water if syrup doesn't cover berries. Remove air bubbles, adjust 2 piece caps..
Process pints and quarts 15 minutes in a boiling-water canner.

It mentions adding 1 to 2 TBL lemon juice to each quarter of elderberries to improve flavor.

go to pickyourown.org there are many basic recipes and directions.

whole fruit can be peel and stand in a light syrup. then processed with a water bath.
