Canning goddesses! Help! They are blubbing!

I canned turkey broth at Thanksgiving and at Christmas and both times they bubbled for along time after they were turned off and still did even after I set them out on a towel. I was kinda worried about them but they turned out fine.

thanks kimnkell!

i've used a couple of the jars - i really wanted to see what they were like! and they turned out really really good. so i stocked up on more jars/lids so i can do the last $5 turkey..... i had to get it out of the freezer to make way for the ham!!!

You're welcome! Lol... you sound like me. I am a can-a-holic. My Hubby tells me that I will can anything that'll fit in a jar. It's just so exciting ! I Love it! I still have a turkey breast in the freezer and I think I'll smoke it in the smoker and then can it. Oh, and I have used several jars of the turkey broth from Thanksgiving and it made the most wonderful dumplings ever!

Do you can your ham too? I was thinking about canning any of my leftovers but I have never canned ham but I would say it would be good.

kimnkell -- Can you give me any advice on canning smoked meats? My pork is so dry I can hardly swallow it. I canned it in diutle BBQ sauce.

ldychef, I usually smoke mine and then I take the drippings from the pan or use turkey broth to fill the jar up after filling it with the smoked meat. My family loves it that way. Happy canning!:)

thanks for the great info - and yes i'd been thinking about canning some ham! but i'm a total newbie and fraidy-canner!!! i'll work my way up tho!

have you ever canned ground meat before?? for instance, what if i ground some of the turkey, lightly cooked it, then canned it in broth?

we use ground meat all the time but i'm worried that if i unfroze the entire bird, ground the meat, then put it back in the freezer it would be bad. so i'm wondering if i canned it, would i be further ahead??

Yes, I can ground beef all the time. It's great to have on hand in the pantry. Ground turkey would work the same i'm sure. Canning it would be the best I think. If you unfroze it and then ground it and refroze it I don't think it would be safe. Canning it would be the way to go in my opinion. I usually can pints of meat for 75 minutes at 11lbs pressure and quarts for 90 minutes at 11lbs.

I'm no expert with a lot of canning experience, but it might be the sauce. Salt and spices can pull juices out of meat. You know more about cooking than I do, but I heard a chef once say to salt meat after cooking. I know salt pulls juices out of vegies. Was the pork cooked first?

Just my thoughts. I canned pork and just used chicken broth and it was great.
