My stainless steel pans have been disappearing...I use my cast EXCLUSIVELY now, and the stainless are just my "spares." I cook everything under the sun in my cast, and love it. So, that is why I picked cast iron personally.
Cast iron if you can safely lift it. But do not mail-order; test-drive one in a store. A biiiiiig cast-iron skillet is too heavy/ungainly for some folks.
