I just now noticed that my cast iron video has over 20,000 views!

About six or seven years ago I became obsessed with my eggs sticking. After freaky amounts of research, I wrote a rather extensive article:

A lot of the response was disbelief. So the video was to show the eggs sliding around the pan and the freaky easy cleanup.

The article covers some common myths about cast iron that might shock even the most experienced cast iron users:

- it is okay to use soap. the problem with soap and cast iron is with MAKING soap

- I advocate NOT using an oven to season cast iron, which is quite contrary to the norm

Anyway, I just spotted the 20,000 thing and thought I would share the info.

I threw out all of my nonstick pans and now only use cast iron and a few stainless pots and pans.

The only skillet I have is a cast iron one. I have 6 chickens and we eat lotsa eggs. I usually end up scrubbing like the dickens after making any eggs in that skillet. Your article couldn't have come at a better time, the chickens are starting to lay again.

I didn't see the movie.

The book was .... disturbing.

As for the eggs on cast iron: did you see the video? That's the proof. Especially the cleanup.

I have two questions,

1 Is stainless the preferred type of utensil for cast iron? I usually try to use wood.

2 Do you have a video for pancakes? :p

I have a really well seasoned 8 inch pan I use for eggs no problems there. But I have just converted to all cast iron and need to master pancakes.

1) the article goes into a lot more detail, but in short: don't use wood, use stainless steel.

2) Did you read my article on sourdough pancakes? Pancakes have always been easy - never a challenge. Are you having trouble?

I was thinking about making a new video showing a pan where stuff is really caked on and how to clean it.

Can you give me a link for our sourdough pancake info. Sounds yummy!!

Well I was using my huge 15 inch skillet, I had made bacon and wiped it out. I think the fire must have been to hot. The cakes were browning to fast and not cooked through. Do you butter the pan?

But it was the first time. I am sure next time I will run a lower fire and start with a clean pan.

The video rocked. I have that same pan. I call it my tortilla pan. Now it will be my egg pan. :) I love eggs over easy, my favorite way to eat them!
