Interesting that it has no eggs. I have heard about substituting mayo for eggs before, now I know it can be delicious!

My SIL's always use mayo when making cornbread and I've made biscuits before using it. But then, I'm a mayo hog - I eat it on anything. Since I'm diabetic, there'll be no mayo cake for me, but I'll droll over yours. :drool

OFG - post a picture if you can keep it long enough. :drool

It's the word "mayo" that freaks people out, until they try it and then they still like it. :D

I used to see a recipe with chocolate cake made with kraut. Couldn't make myself make it - but after trying the black bean choco cake, kraut would probably be pretty good.

Plus - I love mayo on everything! That's what I like about low carb eathing - I can have all the mayo I want.

sigh...I guess I'll just have to get over my mayo fettish and try it out.

blech...mayo...

I used to be so bad that if it even touched my plate I'd refuse to eat the whole darn thing. But now I can at least have it in stuff like potato salads and such.

Made this cake last night. I can't believe how good it is. We are eating it without icing and don't even feel like we need it. Thanks for the recipe! :D

I'm getting ready to make this, just had to get on and get the recipe. I'll probably put some powered sugar on the top, just so it looks pretty. It's for after church tomorrow.

Glad you liked it. It's very moist and the only time we put frosting/icing on it is when it's a birthday and then it's always chocolate and usually with a scoop of chocolate ice cream! :drool
