Might need longer to properly ferment then I go by taste alone, to determine if fermented long enough, to be enjoyable to eat.If I remember correctly, red cabbage kraut can be a little sweeter by default?
It isnt , I do think it stays a bit cruncher and I have read red cabbage is even better for you than greenAfter searching around locally for cabbage to ferment for kraut. Farmbabe ended up ording 40 lbs each green and red from AS. I've not fermented red cabbage for kraut before. But I suspect it shouldn't be any different than green cabbage
