It's been a couple years, but it's very earthy. I sautéed some garlic in butter and then added the smut.
(aka: huitlacoche)

"Loaded with soluble fiber, the amino acid lysine and the antioxidant anthocyanin, the moist young galls are collected two or three weeks after the corn becomes infected. If not harvested the galls will grow hard and spore-filled looking a smutty dark blue or black. The flavor of young galls is musty, earthy if not smokey. Less expansively they taste like a cross between mushrooms and corn."

Recipes I looked up said earthy. Great description, makes me want to fry up a skillet of compost. LOL One recipe said a taste between corn and mushrooms. Stands to reason it would taste like corn and mushrooms, duh.

I live eating raw sweet corn.

Sun flowers are finally just starting to bloom. There's a lot of them, good thing too, because I have a lot of birds who love them.
