The mixes are packed in plastic and oven heat to bake will be enough to kill 99%. Never had an issue, thankfully. But, thanks for the reminder. I keep flours vac sealed and with a bay leaf in the bag.

SADLY, NATURE finds a way to thin the herd. We cannot keep on adding to the human population, without another type of "pandemic" coming along. Be it natural like this virus, or a war of some sort.....

I have been saying since the beginning that it's better to fight a virus than fight a war.

I expect that summer will bring some relief to dark skinned populations that tend to be vitamin D deficient in northern latitudes - and who are most hard hit by COVID-19. There's a strong theory that these people are hit harder because of low vitamin D status, not socioeconomic status. (I am sure socioeconomic status is an indirect factor)

You are so right, and here in Va we are also seeing some of the not wanting to start up the economy thing. The more dependent they can keep us, the more control.....:barnie:rant:somad

You can freeze mixes. Chocolate will sometimes discolor from freezing, affects the fat in the cocoa..... I just don't have the room for freezing. Vacuum packing is what I do for most all shelf storage.

@TexasLisa Even just packing the baking mix into an airtight container (I have used mason jars) with a dessicant pack will do it- you just don't want to leave it in a kitchen pantry in its original packaging. They are fine for a year or so, but if you are talking about holding them for a long time... Also, the baking powder used in them will lose it's rising power as moisture slowly builds up (and plastic IS porous). Baking Powder has a shelf life of only 8-12 months, But you can make it using Baking Soda and Cream of Tartar—both of which have an indefinite shelf life:
Directions:
2 parts Cream of Tartar to 1 part Baking Soda. Mix thoroughly.

Good article. This is pretty much how I live anyway. LOL I have my buckets of rice and beans, but sure would hate to look at that every day. Bring on the garden!
I 'Dry oven canned' several years ago. I did red beans, oatmeal, and rice. I have plenty.
