Poultry is easy to process. You're very unlikely to actually get any illness from home processed poultry.

Now commercial poultry here you have to be very careful with because of their processing method. It's all water cooled and ends up contaminating all of it. I know some other countries are more sensible and air cool but that takes longer.

I have a friend who worked at a poulty processing plant when he got out of the Navy. Was the worst 2 years of his life. He won't touch chicken or turkey anymore. Well he said if I dry iced a processed silkie and sent it to him, he'd actually try it.

If the curve doesn't grow down... I think you are right on a forced lockdown scenario. It will be very hard to enforce in rural areas though.

I don't think rural areas will need it though with the statewide measures like closing schools and nonessential businesses. The financial relief measures are starting to come through. Private businesses first - utility companies waiving disconnection, banks waiving late fees and deferring auto and home loan payments. Now Freddie Mac and Fanny Mae mortgages can be deferred - and that's half the mortgages in the USA. If people have food and housing, they're not going to revolt.... except maybe if they can't get medical care. But we're already doing what we can there - flattening the curve.

Hospitals and medical clinics are becoming willing to accept/solicit donations of homemade face masks and gowns, so that's where I'm seeing the most community action right now. I plan to start sewing face masks tomorrow - I'm not feeling well tonight.

I know it's a different situation in cities. I have a friend in NYC very close to the initial lockdown area, her kids' school was one of the first to close. It's also an affluent area where people are the antithesis of self-sufficient - people there have gardeners and au pairs and driving nannies and dog walkers and personal chefs and such. The news reports are alarmist and overwhelming and there has been so much testing the numbers of COVID-19 cases are very high. I was just in urban Milwaukee, WI right before this whole thing started and there just is no green space there. No community gardens, no grass by the curb, and precious few little patios to put a potted plant on. Cities are going to take this much harder than rural areas.

Out where I am, there's fishing and hunting year round, public hunting land, public boat landings and fishing docks. There are small farms (and a few large farms), a livestock auction/market. It's a place where you can't sell farm eggs because the market is completely saturated. We have Amish community, Amish greenhouse, 2 additional greenhouse businesses, and 3 hydroponic farms that sell local (greens, tomatoes). There's a smattering of community gardens, but most people have a yard to work with.

I had been planning to scale back and have a small garden this year, but this COVID-19 stuff makes me think I'll go BIG again (9,000 sq ft) and give the excess away to people who need/want it. IDK, we'll see how able I am as gardening season creeps up for us.
