DD13 4-h fair is this week. So been busy helping/teaching DD to bake homemade (not pre-processed boxes) and Gluten Free. :th

GF Peanut butter cookies
GF Choc chip cookies - had to do second batch as first "fell" flat but we can eat those lol. ***note to self don't use vanilla syrup when run out of vanilla extract.
GF Zucchini bread
GF Brownies
GF Rice Crispie Bars

Ran out of vanilla so told DD to do the rice crispie bars while I was gone (15 minutes ish)
She microwaved the butter and marsh mellow for over 4 minutes :barnie (told her to do it in 30 second intervals) and it burnt a hole in the plastic bowl and she got it dripped (blobbed) on her foot and got burnt. She put ice on it and when I got back I put tea tree oil and more ice and within 30 ish minutes was ready to start coking again!!
Poor thing the one thing I think she can do by herself and she burns herself. :ep

Now just need to finalize the cutting of the bars and brownies and bag them.
Cooked ham steak for supper, DUDE I AM WIPED OUT!!!!!

Teaching someone to cook a whole new way (gluten free) is harder and takes sooo much longer than I thought. It was bad enough to teach her the old way before!!! But worth it in the end. **Note to self make up homemade packages of dry ingredient brownie mix, pb cookie mix, and brownie mix to keep in freezer so all she has to do is dump and add wet ingredients. ( so I don't have to mess with helping get precise measurements at the exact moment she wants to bake when I am tired.

I guess I cheat. I gave in and bought a bunch of the Bob's Red mill Bake mix. I just use it and the Xanthan gum in all my regular recipes.

Some taste a bit different but I think I have mastered the chocolate chip cookies.

Does your corn ever just fall over?? I am new to corn and I think I might have a problem. Darn gophers.

Yes it can just fall over because of moles, coons,deer, bugs, ect unfortunately. :hu

I wouldn't call that cheating, but I already have all the flours (separately) that I mix into an "all purpose" brown rice mix. And I didn't want to, or have the extra money to, go get several bags of premix lol.. :hide Plus I think it has better flavor than pre mix.

6 Cups brown rice flour
2 Cups potato starch
1 Cup tapioca flour/starch

That is what I use for my general all around "all purpose"

I have a couple more specific ones for bread and such lol but those I have to look up lol and I am heading to bed now..
But if you want them I can post them another time.
