Ewww!! It's too salty!!

the potatoe trick is only going to work if it is hot, as in a hot pot of beans. If these are fermented I am not sure if that will work.

As was said, dilute it with a fresh batch. I didn't find mine salty, but for me, salty would be perfect for bean paste. I tend to like very salty things at times. My blood pressure runs low, that may be why I crave salt at times.

If you are not ready with more beans, put it in the fridge for now, then take it out when the next batch is ready to ferment. I would put a sprinkle of salt on the top of the whole batch to prevent mold, since some of the batch will be older. Mix the two really well. It should be wonderful.

The batch we had for lunch I actually made months ago and found it in my second fridge. It was absolutely fine, no mold....some tiny spots on top that might have been the beginnings of mold, but I scraped 'em off and we ate the rest. We are still standing, hours later! Boy, that was a good lunch!

I started re-reading Wild Fermentation a couple nights ago....when I really like a book, I always re-read it. I learn so much that went over my head the first time through. Well, Sandor talks about a friend who healed his health problems (didn't say what they were, that I can re-call....I do read late and fall asleep on my books, though!) by living for a period of time on fermented foods ONLY. I can see now why that would work for many things, eating only easy-to-digest nutrient-super-dense foods. Had I known a few years ago what I know now, I would've tried that.

Normally, I like things really salty too, and i have low blood pressure too. but this is way past being tolerable. I offerd some for my hubby to try.--He said, if it;s too salty for you, I ain't tryin' it!

ETA I'm doing more beans, man, I'm gonna have enough to last me a year now. :)

Bean paste yum yum yum! One of the first things I made successfully. I need to make some more.

I like to take a couple of spoonfuls of the beans & the same amount of some salsa, and whirl it together for a dip. :drool

Ya know? I thought about that, and thought it might cut the saltiness of it. I will try that when we have our mexican supper next week. Layer cheese ontop and roll it in a tortilla.
