So this morning is bittersweet. Last day at hospitality house. I'm thankful for the time here but it's sad to think where people will stay when their loved ones are in the hospital for extended lengths. There is hope at some point of another group stepping in and reopening. But, I'm also glad to have somewhat of a life back.

So, here is my to-do list for the next month:
paint above kitchen sink
plant green beans, summer lettuce
spray back fenceline
cut all suckers
thin peaches
wax truck
scrap metal run
bring covered trailer home
paint small trailer
get another truck seat cover
personal and clothes shopping
Dr. appoinment
church
menu for items in freezer
finances
paperwork for school
sell 10 more things on CL
clean

:bun I just placed an order for 20 lbs or so of pig fat!!! I finally decided that the nasty textured, bland tasting pork that DH got earlier this spring is just going to go into sausage. So I called all the local butcher shops to see if I could just get the pork fat.

-No, we don't sell just fat.
-What do you want pork fat for?
-I've never had anyone ask me that.

Well, silly me. I remembered that at the farmers market there was a vendor selling pastured pork from tamworth crosses. So I found the vendor list and was able to get his phone #. Luckily he's bringing in an extra fat sow next week so he will have more fat than he uses for his sausage so he'll save all the extra for me and sell it to me cheap!!! So I've got sausage and lard on the way from a good source!!! I think the lard will be done just in time for peak pie season!

My Imooto found a butcher that sells the leftover trash from bacon making for CHEAP.

She says it's amazing. It's the fattier bits :D

So she gets cheap pork fat all the time now.

Yummy! Yeah, I thought it would be easy to find but everyone I asked thought I had three heads or something. I'm glad it worked out this way though because I know how the pig is raised. I should have thought of this first...

When I called to talk to the butcher about how I wanted my pig processed they asked if I wanted the fat. When I said "Of course!" they sounded disappointed :gig
