French Toast made with Eggplant!!!

Now, we all have our own french toast recipes so there are endless combos
Here is mine:
Ingredients:
2 eggs
1/8 tsp almond extract
1/4 tsp all spice
1 tsp cinnamon
2 packets truvia/stevia
Eggplant


Directions:
Peel the skin from the eggplant and slice into as many pieces as you want to use. (Don't make them too thick!)
Now just use that like your bread and ta-da! Mix the eggs, spices and truvia together in a bowl and dip each eggplant slice into the mixture so the back and the front is covered. Immediately place into a oiled (I used olive oil) pan (appox medium heat). Cook enough so that the egg mixture starts to brown a little on the edges, then flip.
We topped them with 100% maple syrup- veryyyyy small amount.
Enjoy!!


Side with fruit and eggs for a complete meal!

Hmmm....... I love French toast. Don't love eggplant. May have to make it for DH who loves both and sneak a nibble.

IF you wanted to go through the trouble, dehydrate the slices a bit first. It was gushing with eggie water. :sick

(My daughter ate them all, but she eats everything!)

I'm sorry, BBH, I shouldn't laugh, but I thought it sounded like barf when I first read the recipe.....:lol:

I HATE eggplant though. The concept is fine though, but maybe find something more bland to replace the bread than eggplant.

(The flavor was ok actually. It was just gushing with egg plant juice. I don't miss french toast THAT MUCH!! :gig)

Thank you for sacrificing yourself and playing guinea pig. Not that I was particularly tempted either. Hate eggplant too!
