French Toast made with Eggplant, tastes like BARF!

Eggplant French toast doesn't do much for me, but then, I don't have gluten/grain issues. But I have to wonder about all the *I HATE eggplant* comments. What is there to hate? Eggplant is really pretty bland on it's own. Kind of like noodles - it takes on the taste of what it is cooked with. And why would zucchini be a better alternative for apparently watery eggplant? Is there anything that is really more watery than zucchini (except maybe cucumber)?

I mentioned it, because it is good deep fried, and I figured it would taste quite good with maple syrup.

Yeah, it's definitely a texture thing for me too. I don't like mushrooms either.
