A friend told me to slice up the eggplant well in advance and soak it for at least an hour in very salty water to draw out the excess moisture. That was for grilling. She said it wasn't watery/mushy if you brine it first. Never tried it, but she is a trusted source. Eggplant doesn't agree with my digestive system, so I have no desire to try it for you.....
