French Toast made with Eggplant, tastes like BARF!

A friend told me to slice up the eggplant well in advance and soak it for at least an hour in very salty water to draw out the excess moisture. That was for grilling. She said it wasn't watery/mushy if you brine it first. Never tried it, but she is a trusted source. Eggplant doesn't agree with my digestive system, so I have no desire to try it for you..... :p

Eggplant French toast doesn't do much for me, but then, I don't have gluten/grain issues. But I have to wonder about all the *I HATE eggplant* comments. What is there to hate? Eggplant is really pretty bland on it's own. Kind of like noodles - it takes on the taste of what it is cooked with. And why would zucchini be a better alternative for apparently watery eggplant? Is there anything that is really more watery than zucchini (except maybe cucumber)?

I hate it in everything except eggplant parmesan. Does that make you feel any better? :frow

It's a nightshade :)

And it's a great color!

And it absorbs flavor so it's really fun to turn into other foods.

But apparently, it sucks as toast. *check*

I only like fried eggplant. I don't particularly care for it other ways because of the texture.

This doesn't sound the least bit appetizing, & I'm a vegetarian...! (But then, I've never had eggplant that wasn't mushy) :sick
