Sorry - it's a commercial seasoning mix with a Creole/Cajun influence. YUMMY stuff!

Whew... long day. I've been trying to make up for not getting anything accomplished over the weekend.

I started a batch of cheese last night, and finished it tonight. One more batch of rosemary/garlic chevre. It is soooo delicious crumbled on a salad - num, num!

Spiced up the pork shoulder last night, baked it today and have it in the canner right now. I'm not real experienced at canning meat, but I'm giving it the old college try... Next time I want to try some raw packed meat instead of cooking it first. Oh, let me be specific - it's in the pressure canner. I've seen different trains of thought, but I'm using the pressure canner for the same reason I put on my seat belt every day - I'm a chicken!!! My self-preservation instinct gets stronger every year.

Piggies are settling in. They love, love, love boiled eggs. They love them enough for me to be able to scratch em a little bit. I started to hand-feed them the eggs, and they would have taken 'em, but then I thought better of it. It might be ok right now when they're only 25 lbs, but I'm not sure I want a 200 lb pig chasin' me down for a boiled egg. Can't wait to see what they'll do for a cookie, lol!

Got my feet propped up now - watching The Voice. An amazing young man just sang and he gave me goose bumps! I think his name is Avery...something or other. A truly gifted young man!

New tv series starting tonight called "Revolution" - anybody else gonna watch it? :D

I don't watch much TV-unless hubby has it on. I'll put it on at times, but mainly for the background noise. If no one is home, I'm alone in the house. I'm dogless and catless right now, so it gives me some company. :/

I got great news last night! My best friend is getting married. She's a veterinarian and she lives in Iowa. I met her many years ago when she was working here in Texas at the local vet clinic and we just hit it off. After her divorce she moved back home (to Iowa). We email constantly, and about every other year we go off on a long weekend together. We went to Vegas last time and YEP, what happens in Vegas STAYS in Vegas, lol!

Anyway, she's been 'keeping company' with a really great guy and they've decided to take the next step and get married. She wants a sunset beach wedding - ahhhhhhhhhh. The BEST news is that she wants me to be her matron of honor - AND - she's paying for airfare and hotel! Dh and I will pick up his airfare so that he can go along. But, WHOOP (almost) free vacation! And, not only is it a beach vacation - it's a Grand Cayman beach vacation! I am so blessed! Now I've gotta get on a major diet and lose 20 lbs before I go...geeze. The wedding is planned for the first week in January, so I've got a little time.

DH and I will go down a few days before so we can get some fun times in ourself before the prospective bride and groom arrive. January in our area can be unpredictable. I don't worry too much about the critters because I have them pretty well set up with feeders and access to hay. The wild card will be water. If the weather is decent it won't be an issue, but if we have a hard-freeze with cold for a couple days (not likely) there might be an issue with ice in the waterers. I'm just gonna hope, pray, wish :fl that the weather cooperates.

The pork canned up really well last night - all 7 jars sealed perfectly, and I gotta tell you, that was some mighty tasty pork! Why do I have to be thinking about food already when it's the first day of my diet - :he
