Yesterday was horrible(!) and, I'm glad it's over. DH and I don't fuss very often, but when I'm treated unfairly - I fight back, and I fight dirty, lol! All over now...
It's another beautiful day in the neighborhood. I got up early and turned the pigs out to the pasture. Now that they're bigger and fatter and slower - I like them a lot more. While they're wandering in the pasture I took the opportunity to fill up their feeder. I wish I had the means to raise them on more free food, but there's just not the opportunity to glean much around here. This last month or so I do plan on adding more milk and eggs back into their diet. It'll save some money and hopefully give me some really tasty pork. (and I do loooooove me some pork!)
Other than that, I haven't been too motivated today. The only other thing I've accmplished is to process some eggs... boiled the older ones up for the dogs and pigs and us - and wiped off the fresh ones. I refrigerated some that I'll either sell or give away. I usually don't refrigerate all of 'em, I leave a couple dozen on the counter that we'll use this week. Speaking of eggs - that reminds me....
I made the best and sort of unusual egg dish a couple nights ago. I sauteed some onions and garlic in my big frying pan and then poured organic spaghetti sauce over that and let it simmer. When the onions and garlic were nice and soft I slipped some fresh eggs into the sauce and let them simmer about 5 minutes until they were done. Then I grated some yumalicious aged parmesan over the top of all of it and served it over toast points. Sounds weird - but OMG - it's sooooo good! It's a good way to use up eggs - it's cheap and it's pretty healthy. If you leave off the toast it's pretty low carb too. Now I want more! Maybe next time I'll fry bacon first and simmer the onions and garlic in bacon grease - then crumble the bacon up. Bacon an eggs with a tomato twist!
Guess I should get off my behind and go do some laundry....ugh.
I followed WBF's lead and asked EVERYBODY for scraps and whatnot for our pig girls. The majority refused to save their 'garbage' for us but once a week we get a delivery of 40-50 pounds of old baked goods for them!

That sounds incredibly good right now, especially since I'm so salt deprived Eggs and sauce and SALTLY bacon and YUM!! You people are gonna kill me
SSD...that's awesome that you're getting that much feed!!! Ya some turn their noses up, but then their hand is out for bacon betta NOT touch my pork bellies!!!
Funniest thing - today my neighbors asked if they could feed their leftovers to the pigs! Well, of course you can! They had some leftover meat and carrots.... guess what... my stoopid pigs don't like carrots... I really thought pigs would eat ANYthing!
SS - When I made the egg dish the other night I accidentally hard-cooked the yolks. I put some foil over the pan to keep it warm, and those yolks just kept right on a cookin'. They turned out just like they would in a hard-boiled egg. Technically, they are supposed to be kept soft, but they were delicious!
I actually got some more done today. I got out in the garden and made some more rows. I don't have anything else ready to plant, but I wanted to work up the rows before it starts raining next week...if it rains...just because it's predicted doesn't actually mean it will, right?
I'm trying to get my chores done early today so I can watch the Stupid Bowl! I don't really give two hoots about the game, but I am on two football pots - so I'm hoping I can walk away with a couple dollars. If not, I donated to a good cause. These two pots are fund-raisers so, I don't mind gambling a little on that because it'll help out some folks.
Hubby just told me it was time for the Stupid Bowl. I don't really care. I'm not that fond of football. Now, if it was the World Series, and the Phils were playing, it would already be on!
I am watching the Super Bowl, and have no clue how either of these two teams made it this far. It's truly pitiful I just wanted an excuse to make pizza and buffalo chicken anyway I waited ALL day for that meal, barely touching salt, and got full off two pieces of pizza and ONE piece of chicken
