that sounds like a good plan.
i know when piggy time comes for me (not these girls but when they have abbies im keeping one (mabe 2) each year for freezer), im going to have to send em of...its hard enough to do bunnies piggies would neer kill me (plus i dont have any kind of hoist/winch type gear lol

I went grocery shopping tonight after work. I have got to stop that! The last thing I need in this house is any more food, lol. Soooo, DH and I have decided that as soon as Spring Break is over (and my grand kids go home), we're going on a hiatus from grocery shopping - again. My pantry is over-flowing. Of course, my daughter and grand kids will probably go shopping in my pantry before the leave, so they may help me out a bit!

Wellllll,,, the pigsters are down to their last 35 hours. Saturday morning is their "time". I talked to neighbor today and he thinks it would be a good idea to go ahead and do them both. Oh boy... They got a good feed tonight. Tomorrow morning I'll turn them out of their pen for a last day of freedom. They can run around, graze and play in the pond.

The boyfriend of one of my co-workers grew up on a farm in Louisiana. When he heard the plans for Saturday he offered to assist us and specifically asked what we were going to do with the heads. He said he'd love to make hogs head cheese. I told him to go for it, lol. I even offered the use of my kitchen so he doesn't have to transport the heads. The real reason is that I'd like to see the process! I'm a firm believer in not wasting anything, so this will be great. Now, I have no idea what hogshead cheese is all about - except that it's NOT cheese at all. Just in case he's not able to - I looked up the directions and OMG!! The first steps say to "remove the ears, eyes and brains"! They lost me right there! I still want him to do it - but I just wanna watch...and maybe take a tiny taste. Maybe.....

It seems to be one of those skills that are about to die away. I really hope he wants to do it - even though I'm sure it'll be one of the gross-est things ever, lol!!

I'm officially off until March 18th! YIPPEE!! Of course, that means I'm gonna be working my tuckus off the whole time. Yesterday I heard a student ask "A" what he was going to do for spring break. ("A" is the student that helps me out occasionally.) A responded that he's working for me all week! I'm not sure about allllllllll week, but I'm gonna definitely put him to work. We've got a lot of gardening to do, some fencing, some painting.... and lots more I'm sure. Geeze, maybe it WILL turn into all week...guess I better go get some money out of savings so I can pay him.:/

I need to get my kitchen spiffed up for the cajun cook just in case he really does do the hog heads. I offered him the use of my kitchen cuz really - who wants to drive around with a couple severed hog heads in your car?

Gotta get busy - so much to do!

It's only gross if the eyeball pops and the black liquid oozes out. :D Isn't that the same thing some folks used to call scrapple? I think it is...
