How timely! This is from Cultures for Health on Facebook:
Cream Cheese Dip with Garlic Scapes
1 cup traditional cream cheese
2 T. flax seed oil
6 garlic scapes

*Mix cream cheese and flax seed oil in a blender. Or, if you do not feel like pulling it out, I mixed mine in the serving bowl I planned to use with a rubber spatula. Came together just fine.
*Chop up garlic scapes.
*Mix scapes thoroughly into cream cheese mixture.
*Keep chilled until serving time.

serves approx. 4 people

I have all three ingredients except that I will use my chevre instead of the cream cheese.
:woot
I have to point out a serious flaw in your recipe. It says serves 4 people. HA! Serves one. Sheesh.

It got rave reviews from DH. Not bad for pulling it off without much thought after a late afternoon of bike riding in the park!!
I have wicked bad garlic breath though....

My 8-month-old nephew was teething on one of my garlic scapes tonight :) We thought it was cute, but his parents nearly passed out on his breath!

I use mine in stir-fry, soup, pesto and pickling. Tonight we had a stir-fry with scapes, new potatoes, first summer squash, asparagus and sugar-snap peas. It holds us over until real garlic is ready in the next month.

This is an old discussion, but I was searching for uses for garlic scapes and I found this thread. I bought a huge bag of garlic scapes at the farmer's market. It was kind of an impulse buy, they were a good price, and they are tasty. But I'm not really sure what to do with all of them. I found a recipe for fermented garlic scapes I thought I would try. Has anyone else done this? What can you do with pickled garlic scapes?

I have been trying to use them in place of garlic, and adding it to whatever I can, but I still have lots. I was thinking of maybe freezing or dehydrating some as well, but am not sure how they fare when preserved this way. But I'll definately have to try that cream cheese dip!
