Yesterday's menu:

Breakfast:
hunk of raw cheese
apple
water

Lunch:
biggy vegetable salad (fresh h/b eggs, tomatoes, bell peppers, onions, lettuce mix etc.)
homemade ranch dressing
water

Dinner:
Spaghetti squash garden spaghetti (full of mushrooms, bell peppers, onions, shredded kale)
water

dessert: a square of soy free dark chocolate (Boom Choco Boom)


Today's menu

Breakfast:
fresh eggs and salsa
water

Lunch:
leftover spaghetti squash garden spaghetti
water

Dinner plans:
chili (homemade chili powder: 1 t paprika, 2 t ground cumin, 1 t oregano, 2 t garlic pdr)
chili is full of ground bison, onions, bell peppers, more shredded kale, garlic etc
served on a bed of mashed sweet potatoes (got the idea from my gourmet cook friend)
water

dessert: the last of my homemade chocolate honey ice cream (made with raw milk and raw honey)

Those are neat! I have a print out for if I'm cooking enough to do more than my weekly "two meals" and eat leftovers.

Primal Hummus:

Primal Hummus (Zuchinni Hummus)
So for all you Hummus lovers, here is a replacement that honestly tastes better in my opinion. This is absolutely amazing, I have used it on breakfast, lunch, dinner and everything in between. Enjoy
Ingredients:
2 peeled and cut zucchini
3/4 cup of tahini
1/4 cup of olive oil
1/2 cup of lemon juice
4 cloves of garlic
2.5 teaspoons of sea salt
1/2 tablespoon of ground cumin

Steps
(Be afraid this is very labor intensive, don't work too hard)
Combine all the ingredients in a food processor or blender
Blend thoroughly
Enjoy

Today's menu:

Breakfast:
plain kefir
a plum
glass of milk (raw jersey)

Lunch:
hot wings
biggy salad
water

Dinner plans:
slow roasted chili rubbed chicken (slather with bacon grease, rub with chili rub, put in a dutch oven or a baking dish with foil topper, add 1/2 cup of stock or white wine, slow roast for 3 hours at 275, then turn it up to 375 for 45 minutes)
chili rub: 1 t paprika, 1 t oregano, 2 t cumin, 2 t garlic powder, 2 cloves of garlic crushed, 1 t sea salt. I had some leftover, so don't add the crushed garlic to the rub if you want to save it for another meal.
mashed sweet potatoes with ghee and sea salt
water

snack:
liverwurst (OMG!!! So yummy!)

dessert:
homemade pineapple coconut ice cream (see recipe section if interested)

Check out the nourished kitchen link, she has some great recipes and techniques for roasting. :)

I usually roast a chicken every other week and use the bones for a slow cooked broth. Usually it is just garlic, sea salt and cracked black pepper...tonight it is chili rubbed roast chicken, see above.

I did, nummy to the sour cherry duck!!

I'm already planning pulled chicken pita sandwhiches w/ a dressing of hummus & chopped tomatoes. Mmm, pulled chicken quesadillas with tons of salsa and avocado!
