What are your reasons for going gluten free?
If its just to do it, then you really do not need to.
Just learn to make good soaked or sourdough breads.
If you use the White Whole Wheat (think spring wheat) and Spelt you will get beautiful soft loaves.

If you suspect that it is causing allergic reactions, then yes, quit cold turkey.

Bethanial, your challenge is going to be going GF with school breakfast and lunch. Without a diagnosis the school is not likely to accommodate your request. How old is you child? Mine is 8 and makes her own choices, even reads labels when at a friends house.... Although a food bar in a cafeteria would be tougher to navigate with gluten hidden in so many things.
When we first went GF I did not buy expensive GF foods....we simply didn't eat pasta, bread etc. I used lettuce to make lunch wraps and leaned on other foods to fill in. Now there are a few processed GF foods that I buy.....because I am lazy :rolleyes:

Dr. Price is actually the dentist who did research in the early 1900s.
During the 30's he traveled the world looking for isolated communities that were very healthy yet had no access to modern medical care. He found it was their diets that made them vigorous while other villages with access to modern food nearby suffered from all kinds of illnesses like obesity, heart disease and cancer.

The areas where they ate meat, raw dairy, fermented veggies, soaked, fermented or sprouted grains and beans were all trim, strong, and had great teeth despite never using a toothbrush.

Those that ate white flour, sugar, biscuits, etc... had a lot of cavities, a mixture of obesity and malnutrition, diabetes, etc...

It's a fascinating read.

I am hitting the GF WALL. I am starting to get the feeling in the back of my brain that says "come back to wheat....you know you want to just give up" I get that feeling that I am not able to eat so much. I have to completely rethink my menus to make them GF for me while my husband and children can eat whatever.

I am someone that craves bread, always have. I love flour tortillas, freshly baked bread, cookies, cakes, crackers, pizza, etc. and to do them GF is just not an option cause the flours to substitute are too friggin expensive. I don't know where in the world I would find whole grains around here either. I can't afford to spend $6-$12 on 2 cups of flour.

I just checked out a GF cookbook from the library and hopefully that gives me some hope. I can't pay $6 for tiny loaf of brown rice bread or hemp bread that I may or may not like and had to drive an extra 20 minutes to find in a store.

I know I can do it but I just have to wrap my head around it. :he

:hugs We all went through this at the beginning. That strong craving is a certain sign that you are allergic.
You might try advertising on your Craigs List to see if anyone has a co-op for grains and things.
I know you will not be able to use Azure, but I am certain that there is an Emergency Prep buying club that services the whole US.
Anyone remember what it is called?

Also, with pancakes, we absolutely love the rice version. They are so like a white flour pancakes.
When I want a sandwich, I slice two thick slices of cheese, spread butter on them and the add some meat and pickles and lettuce.
Lettuce wraps are awesome as well.

The brownie recipe is very similiar to the cake recipe. I will see if I can locate it.

We have a bakery/cafe near us that serves incredible GF pizza, bread and deserts, and the brownies are one of them.

Here is the one I was looking for. Just please do not use the agave. It is not at all healthy, regardless of claims. Use honey instead.

And here is one from KerryAnn Foster from www.cookingtf.com Join her site for lots of good insight into cooking GF as well.

Nut Butter Brownies

1 egg
1 cup peanut butter or other nut butter
1/2 cup honey
1/2 tsp baking soda
1/2 cup butternut or other winter squash puree

Preheat oven to 350 degrees. Grease an 8x8 square pan and set aside.

In a bowl, beat the egg with a whisk and then add the peanut butter and honey. Beat until smooth. Add the baking soda and squash and whisk until mixed. Pour into pan and bake 25-30 minutes or until a toothpick inserted near the center comes out clean.
