Thanks for all the great ideas!! I cut up a papaya last night...well, half of one. I was going to try a salsa, but got busy so had to put it in the fridge. I'm not sure I'm crazy about the flavor, but I'm going to give it another shot. I want to like it. I am definitely going to dry some, because perhaps that will make it sweeter and tastier.
The lettuce is very tough and bitter. :/ I brought a few heads out for the animals this morning and they loved them.
My pup Buford is a green bean fiend! He LOVES them! In fact, I had the crate of beans open last night and he kept going in and stealing them! I had to close the crate so he wouldn't put a dent in my stash. I have a few pics of it so I'll post those later.
Good idea with the beets. I"ll definitely save and freeze the greens. I'll try roasting the beets too, because I've never tried them that way. I've just had them pickled.
