I Need Chicken Storage Ideas Please!

This past weekend I canned 9 birds and got 7 quarts. I do bone out and make the stock to can them in. I love my canned chicken. Its an instant meal when I have forgotten to take something out of the freezer. I prefer to do it in pints, I just happen to be out of pint jars when it was time to can the birds.

Since we own three and a half freezers(the half is the side by side in the kitchen) I vote that you get another freezer. :D

Thanks for the tips, everyone!! I would LOVE another freezer, but it's not in our immediate future. Maybe in the next month or two though!

I think what we'll do is freeze a few whole, quarter most of the chickens, save the necks, backs, feet, etc for stock, and then can the ones that don't fit in the freezer. I am in need of jars and have a post on CL right now looking for some inexpensive ones!

A lady (?) emailed last night and said she had some, and also had an old Presto canner if I wanted it. I'm not sure what her price is, still waiting to hear back. I'll either use it as a second one or give it to my sister!

its like we are twins, skr8pn... us too!

AP - have you tried craigslist? maybe putting a 'wanted for free, we pick up' ad? even if you get one season out of it - it would be worth it. there are a lot of folks moving and just giving stuff away.

and yes we can too. i roast/stew then can. turns out great and superduper easy for quick meals!

I'll keep an eye on CL for freezers. Maybe I'll post on Freecycle if I can figure out how to use it. :lol:

The lady on CL said she'd sell her 21 qt old Presto canner for $50. Eh. I just can't see spending $50 right now. :/

Spatchcock them.

You can them store them FLAT but you still get use of ALL the meat!!
I spatchcock almost every chicken and turkey that I cook. It cuts cooking time by 2/3ds

I LOVE doing turkeys that way when I smoke them, because you don't have that cavity to get the flavor into, or to have to heat up! :drool
