Thanks WZ - I've got to get more bacon (my bacon grease stash is nearly gone, so I don't have enough to make this - right now!), but I WILL be making this very, very soon! It sounds delish :D

Yeah, I actually answered the Mayo question myself after posting that. The FIRST ingredient is Soy Oil... I checked my dressing... Soy oil. This stuff is EVERYWHERE! HA!

I am dying to try the bacon mayo!

I, too, can't stand highlighting/writing in books! GRRRR!

Good luck with the second offer. Might have to put a list together of the books I want and throw it on freeCycle too. Great idea!

:hide I like highlighting in books - if it's only ever going to be for me, so I can go back and reference stuff faster. I wouldn't sell/give away a book I'd marked in.

Well... here's the deal with that for now.

I have about 8 lbs of frozen skinless/boneless chicken breasts in the freezer to use up. I was going to switch to whole chicken last week, but they want $10 for a medium broiler around these parts and the breasts were on sale for $1.79 / lb.

The kids and I are going to be raising our own chickens, quail, and rabbits this year so will be switching soonish but still need a healthier way to eat the breasts I have for now.

Any other suggestions?

Maybe I should clarify. I was referring to the books I get at the library or used book store. If you want to highlight your own books, I'll back you up! :thumbsup

For now, load on the home made mayo!

The whole is still cheaper. Roast it with veges, eat the meat for dinner and then you put all the bones in a pot, cover with water and simmer for 24 hours. Add water as needed.
Then you have soup base! It will be gelatinous when its cooled!
Add extra meat and veges from dinner, and any more that is needed. Salt and spice as desired.
Do not skim the fat off!

Sorry freem, I thought I posted that before. Didn't mean to deny you a form of bacony goodness :D

The problem with most mayo made from good fats is that they get hard in the fridge. You can either just make what you need or mix whatever more solid fat you have with a more liquid fat like olive oil.

Just cook that boneless in some good bacon grease or something similar, and be sure to use a bit of salt on it. I buy that now and then for chicken salad sandwiches or a quick soup or pot pie when I have lots of broth but no more meat. I have lots of broth on hand because I make my own catfood.

You can usually find a place that will sell whole chickens for less than $1.79, and you need to use the entire bird, ending with making traditional broth from the carcass. There are important nutrients in every part, including the bones and cartilage. There are instructions in NT.

You can also get leg quarters for $0.69-89 per pound in a 10 lb bag, usually, and maybe even breast quarters with the wing and back still attached. Find a butcher shop or meat store near you. These things are harder to find in the "regular" grocery stores.

I, too, was totally overwhelmed when I first started learning this stuff. Give yourself a couple of years to ramp up, but take our advice as much as possible for now for the sake of your health. For me, the sense of betrayal was the most overwhelming. I'm over it now, just disgusted by everything I read and hear in the mainstream media.

Eating traditionally works perfectly with a self-sufficient lifestyle, and is the way to better health. And is delicious. And very cheap! And is expensive gourmet if you buy it ready-made!
