So, I am on the way out to do some shopping (after I shovel snow out of the drive! :somad)

What would you all reccomend for me to do with the baked chicken breast for my lunches for next week?

I was going to have the wraps listed WAAAAYYYY back on page 1 or 2 but want to start my eating changes beginning right now.

Yes, I am helpless at this point as I am still confused about some of the posts here and haven't gotten any of the suggested books yet (but did check and the library has most of them).

Cook them in a good fat :) Coconut oil, butter, EVOO...

Serve them with fresh greens (drizzled in good fats also, to release the vitamins... a dressing or just pour hot bacon grease over them and toss with the crumbled bacon and some cheese mmmmm), or sauteed squash, or any other fresh veggie. Serve or cook the veggies with good fats, is the main thing. And don't over cook them.

I spend all spring making big salads of greens, nuts, dried fruit, cheese, bacon crumbles, and an oil based vinaigrette. Then I cook chicken (diced and in bacon grease) and toss it with the salad.

MMMMMMM! That sounds good! I thought this was going to be painful, but if that is any indication of the REAL right way to eat, this is going to be GREAT!

Quick question, is Mayo a good fat? Still struggling here. Sorry!
Cheddar cheese OK? It's my fave.

I try to buy cheese that doesn't have chemicals in it, but cheese is good fats :D All cheese = win!!! Noting that "american cheese slices" are a food product, and not cheese LOL.

Mayo is not bad. I suggest make your own and play with oils. It's just eggs and oil and vinegar. :) You do not want veggie oils, is all. So if you have a mayo with a GOOD FAT, the mayo is great. You can make your own from any oil though.

1 cup olive oil or other good-quality oil. The oil determines most of the flavor.
1 egg yolk
Juice of 1 lemon, or vinegar
A pinch of salt (and pepper, if desired)

Beat until thick. I toss it in the blender together LOL.

ETA: Heck yeh. I eat SOOOO good. LOL. Everyone feels sad for my restricted diet but their diets are bland and dull. I love foods.

Mayo can be a good fat, BUT commercially sold mayo uses canola or soy oil which makes it NOT good.

Making your own mayo can be tricky but it is delicious. Bacon grease, olive oil and ghee (clarified butter) can all be used to make mayo.

Bacon grease? In MAYO?!? Please, WZ, tell me more! Do I use it in the proportions Abi lists above? That just sounds so scrummy yummy!

Hey there again.

Yesterday I posted on my local Freecycle for a copy of the Nourishing Traditions book. I saw it at Amazon for about $18, but thought what the heck...

I got two responses and went and picked up the first response book. Only thing is, the owner used skinny dark pink marker to "highlight" the text that she was interested in. Aauuughhhh.....I hate marking in books. Its hard to read now.

So if the second response comes thru, I'll then pass on the one that I picked up with the pink highlights.
