There's a thread floating around right now called Pie Pumpkins?

Here's what I use my pumpkins for:

waffles, muffins, bread, gnocchi, pancakes, smoothies, pie, cake, soup, lasagna, cookies, pizza, fries, granola (seeds), curry, with pasta, pudding, biscuits, angel food cake, oatmeal, roasted veggie medley, brownies, dinner rolls, stew, risotto, gingersnap cookie dip and stuffing.

Let me know if you need specific recipes :D

Boy, that sounds good! I read a fiction story once in which the main character was a cook. She made ravioli with pumpkin in the middle and topped it with herbs, butter, garlic and salt. I was positively drooling and have been stuck on that ever since!

I also have a recipe for empanadas, the dessert version of ravioli, I think, but I've never tried it.

The gigantic pumpkins don't have as much flavor as the pie pumpkins, so be forewarned. They also tend to be pretty watery. But still useable! I roast a bunch of sugar pumpkins every fall and puree' and freeze them in half to one cup portions. Then use them in any recipe that calls for canned pumpkin. If a recipe calls for pumpkin pie filling, just add some pumpkin pie spice or cinnamon and alspice and nutmeg or whatever you like. My favorite way to use it is to add to soups and stews, especially chicken...yum!

Sorry about all your losses Jay, seems like it has been a tough gardening year for all of us.
Sounds like the evil squash vine borer to me!! They make tiny holes in the vine and then drink the sap and kill the squash. If that is the case - clean up all those dead vines and BURN them if possible!

Mine are still blooming.....the ends of the vines are growing up a storm but the beginnings of the vines are ka put!

Gonna have to buy some to freeze the puree.

I like to put pumpkin puree in pancakes, muffins with raisins, waffles, and bread. Cut open the top and scoop out the seeds. Put the pumpkin in a roasting pan and rub it with oil. Bake it until it falls apart and scoop out the pulp into a large bowl. Use an electric mixer to "puree" the flesh and all the stringy bits will wrap themselves around the beaters. Then put it in containers and can or freeze.

My elderly German neighbor gave me a pumpkin two days ago. It has to be a heritage pumpkin, it was so ugly my dog was afraid of it. Seriously he growled at in until I proved to him it was ok.
Anyways, It had very deep veins and was a really dark orange-ish grey in color. I could not believe how darn meaty that thing was. It had the tiniest space inside full of seeds. I saved every single one. Roasted it last night. We had some for dinner mashed with butter and a bit of brown sugar. The rest I will process and freeze.

I couldn't find my pumpkin ravioli recipe, so I went looking to find a similar one. Well, I am not a huge fan of Martha Stewart, but this recipe sounds sort of like the one I have used. I don't think I used the amaretti, but think they might be tasty, if available. I also use homemade pasta. I make a sage and brown butter sauce, but don't add the balsamic vinegar - because DH doesn't like vinegar, and also because I never thought of it :D.

Somewhere along the lines of being ss the pantry has been a focus point on this forum. :frow

So what can you expect? The norm of canned goods, yup I've done that. Carrots in the sand box, yup gottem.

Onions in the hang, yup got those too....

Shallots, got those too....

Womens stockings and stuff, got that too...

And than there is the dried goods, I got that too.....

I also am still drying peppers, where do red crushed peppers come from? Red crushed peppers. LOL..

I also dried some red bells this year for taste in soups. :)

My pantry isn't much, its cold, dark, and I built it myself. Looking good...
