When I went on a gluten free diet the first things I noticed were I had tons more energy and I never get depressed. But you have to do it 100%. I can always tell if I have eaten something accidentally because it takes so much effort to do anything ( no energy) and I am likely to feel depressed.
This happened with me, although it took a while. I first noticed weight loss. Then my canker sores went away! Now when I get contaminated, I get canker sores. It sucks-especially since I have dealt with them my whole life and it is so awesome to be able to talk without pain! I am SO glad my energy levels are back up where they should be!
My hormones have made a comeback as well. I am pretty sure that the birth of my second child enhanced all of my symptoms. (I am sure I have Celiac-Sprue) I had tons of energy with my first son, house always clean, dinner made...my second came around-I laid around, couldn't sleep, couldn't wake up. No sex drive...irregular periods (spotting in between).
My ND said that the spotting was from anovulatory cycles-no ovulation, but still shedding. I went on Natural Progesterone, and things got better with my cycles and my sex drive, but not too much else.
Then, after noticing my son's eczema, I started the elimination diet with him, found out that Gluten was the cause of his eczema. Then, I started reading about Celiac, and that it is hereditary...well, I had quite a few symptoms, so I made our whole house is gluten free, except for a few items my husband still chooses to have-which is kept away from the kids.
I get contaminated whenever we go to my in-love's though. It is very frustrating, since we go there every weekend. I just have to remember to make our food and bring it up there. She tries to make things G-free, but she doesn't quite get the contamination part yet. If she cuts an onion where a piece of regular bread was without washing it GOOD...It will make me contaminated.
I hope you find a doctor that will work with you. I would suggest a Naturopathic Doctor, since most MDs are treating symptoms, not causes.
