Leaf Lard?

So...why is beef fat called tallow and pork fat called lard? Is there a structural difference?

Ya, I was wondering the same thing....this whole thing is still freaking me out a bit. Maybe I'm just having one of those days....

And I remember telling my youngest, who was 6 at the time, that our Thanksgiving turkey was grown on a tree. He was bawling at the time. Maybe it's a genetic thing.

Thanks guys! When they said leaf lard this is NOT what I thought it was. Where the heck did it get it's name??

So, how long does lard keep? I bought some lard rendered at a harvest festival last fall that I have in a coffee can in the frig.
