So...why is beef fat called tallow and pork fat called lard? Is there a structural difference?
Ya, I was wondering the same thing....this whole thing is still freaking me out a bit. Maybe I'm just having one of those days....

And I remember telling my youngest, who was 6 at the time, that our Thanksgiving turkey was grown on a tree. He was bawling at the time. Maybe it's a genetic thing.

Has anyone located the big girl panties yet? :/

* Free and OFG approach with big polka dotted granny panties on their heads, attempt to hand Marianne the all important "kitchen thongs" but burst into gales of laughter and fall all over each other, snorting and crying with glee *

Hmmm, good to know. I actually have some tallow in the freezer right now from last deer season. It was one of those things that we kept thinking, "Surely we can do something with this right?" Thanks guys! When they said leaf lard this is NOT what I thought it was. Where the heck did it get it's name??

You guys need to write books!!! So much I don't know!! :hu

So, how long does lard keep? I bought some lard rendered at a harvest festival last fall that I have in a coffee can in the frig.
