Lard is softer than tallow. Tallow used to be used for candles - it is really hard. Also used for soap. Less often used for baking now, though I suppose your average poor farmer of 300 years ago would use what they had. :)

Tallow is made from beef suet and is very hard....lovely (the best, actually!) for deep fat frying and for soap making.
