Low-carb stew thickener?

I was the one that said almond flour was a lousy thickener :sick

As for using pumpkin, you can't even tell it's in there. I would try it and not tell him. Bet he never notices :D
 
xanthan gum! It is low cal and takes on the flavor of what ever you are cooking or mixing it with.
(Not sure about the carb count.)

Recipe:
Mix 4 oz of warm water with 2 tsp xanthan gum powder. Shake or mix until dissolved.

If shaking, allow 1-2 inch head space in the container and put lid on. Shake vigorously for 5-10 seconds. (Shaking hot or carbonated becerages is not recommended.)

If mixing, ensure there is at least 2-3 inches of head space and mix vigorously with a fork or wisk (like beating an egg) for 20-30 seconds.

Let mixture sit over night to fully dissolve.

Use thickener the same as you would use "Simply Thick".

For nectar consistency, add 1/2 oz (1 TBSP) of above recipe to 4 oz liquid.

For honey consistency, add 1 oz (2 TBSP) of above recipe 4 oz liquids.

I like it. Guar gum makes it all seem slimy. But xanthan is better. :) I forgot. I have some but I haven't used it in a while.
 
So what I ended up with, was cutting the amount of "flour" needed from 1 1/2 cups to 1 cup, and used 1/2 cup of buckwheat flour and 1/2 cup of almond flour for it. I didn't bother "thickening" it at the end but it was a nice rich thicker-than-broth texture. I didn't reduce it either cuz I was busy watching the State of the Union until it was time for dinner.

In any case, I figure that 1 cup of flour spread across several portions isn't going to bother DH's diabetes. Especially considering he had a couple small pieces of homemade bread and new potatoes to go with the oxtail stew.

Just trying to cut out excess carbs in the stew so he *can* have the sides he loves.
 
Honestly, flour isn't that high carb, especially if you use whole wheat.
1 cup whole wheat flour = 87g of carbs = the equivalent of just under 1/2 cup of sugar.
