Master Mix- Baking Mix

Homemade Mixes Good Food . . . Faster

Prepare and store your favorite mixes, then when you need a quick solution to surprise company or feeding your hungry family, reach for your mix to make your favorites . . . faster.

This is the Master Mix-Baking Mix Recipe from our Homemade Mixes cookbook, a cookbook inspired by readers of The Keepers at Home Magazine

5-lbs. flour (whole wheat, oat, or all-purpose)

2-1/2 c. dry milk solids (powdered milk flakes)

3/4 Tbsp. salt

2 Tbsp. cream of tarter

1/2 c. sugar

4-2/3 c. (2 lbs.) vegetable shortening

Sift dry ingredients together. Cut in shortening until mix looks like cornmeal. Store in refrigerator if using whole wheat flour or oat flour. Room temperature storage is okay if using all-purpose white flour. Use the Master Mix in your favorite recipes that call for baking mix, or the Homemade Mixes cookbook below has many great recipes.

3 c. Master Mix

3/4 c. water

Blend and knead for a few strokes. Pat out and Bake at 450 degrees for 10 minutes. Yield: 1 dozen.

That mix sounds really handy! I make mixes all the time and keep them in the fridge. When I am making something from scratch (wait, everything here is from scratch! :p ) I mix up a double, triple, or quadruple batch and divide it into baggies for the fridge or freezer so the next few times will be much quicker. I use a sharpie to write instructions right on the bag. I don't bake much in the summer, just the occasional pizza and batch of rolls while the oven is hot, but I have several bags of buckwheat pancake mix in the fridge for use with soups.

One thing I'd add.....skip the shortening and use lard or other rendered animal fats. Trans/hydrogenated fats are the key to Type II diabetes and several other serious health problems because they replace the saturated fats in the cell walls and inhibit proper functioning of the cells. "Trans-free" shortenings are often thickened with soy protein, a hormone disruptor.

To make it even yummier and healthier, skip the powdered milk (neurotoxic) and just use real milk as the liquid when making up a batch of something from the mix.

That book looks intriguing! Bet one could make some nice gift baskets with some of the recipes and some cute jars, or cover the tops of recycled jars, labels removed, with a square of pretty cloth tied with raffia or ribbon.

I love make it at home mixes! I have the last of the baking mix in my freezer now since I probably won't be doing much in the way of baking during the hotter months. I'll keep using shortening in mine as two of my three kids (all grown) are vegetarian and I want them to keep eating here.

It's great to know that you can mix up any kind of convenience 'food' or mix whenever you need it.
