FYI on nut milk. They are packed with Phytic Acid. Bad news. If you make your own, due to actual allergies to dairy, then the nuts need to be soaked and dehydrated properly first.

Next goal of mine :D

I made almond meal last night, no idea what to do with it now! I tried melting coconut oil to make a butter, didn't work.

Try raw milk first.
Its the pasteurization that tends to cause the congestion issues.

Worked for me. I use yogurt and cheese no problem though. And almond milk is such a nice substitute - works really well in cereals.

No adult really needs to be drinking milk anyway.

Depends what role of milk you are trying to replace.

As 'something enjoyable to drink', substitute your second-favorite beverage, whatever that is.

As 'source of calcium', substitute yogurt or cheese or other dairy products to whatever extent you can handle them; and other food sources such as canned salmon with bones and various veggies and so forth.

As 'white liquid to cook with', coconut milk is good in many contexts although obviously it gives you a much different-tasting result; or just stop cooking so many things with milk-based sauces :p
