I used to make those pancakes often. Just sprinkle with fresh lemon juice and sprinkle with powdered sugar and serve with fresh fruit.

Here is my gluten free version!

I just used rice flour in place of the wheat flour.
The topping is two apples, sauted with cin., nutmeg, butter and honey.

I love pannekoeken. Unfortunately, DH is diabetic so I have to be careful how much carbs we eat. But those look awesome!

I would make it with whole wheat flour. I am hypoglycemic and also need to watch my carbs, but I just stay away from refined carbs, complex carbs are ok, although I try not to eat too much bread and pasta and stuff like that. You could even skip the sugar called for in the recipe, it tastes great without it.

I can't use whole wheat due to allergy.
I use ground brown rice.
I did not use sugar either. Honey for us!
