We shall find out soon if we like goat meat. DH is going to butcher a pig and a goat momentarily...

WooHoo! I love it! Red wine, garlic, onions...it can take aggressive seasoning! Or goat/pig sausage? I've never had that but now I'm wondering....

We want to try goat/pork sausage but I will do one lb of it before we get too excited in case we don't like the goat taste. Don't want to waste pork! Probably do some stew meat too.

Small pig and he had help! I think they're skinning the goat now, they paused in the middle. It's cold out! He kinda sorta used too much firepower on the goat so it's not pretty he says lol. He had never done a goat before and wanted to make sure it went fast. It did. Next time he'll stick with the .22!

Done skinning he said, he saved the hide so he can learn to tan when he has time. It's in the freezer. Once we have lambs we want to raise them long enough to shear, butcher and tan the hide. Shetlands grow slow though so we might shear twice before butchering! I've been tempted to get a ram and try to breed for late spring babies but I'm resisting! They're seasonal breeders so it's almost too late anyway. And I want early babies the way people have been having barberpole issues, so they're stronger when it gets warm.
