hee hee hee ok the butter is a little funnier... but seriously you know those mandoline slicey things? dang... i cut my thumb on one so bad.. about TEN YEARS AGO and the dang thing still hurts!
actually that is a huge chunk of.. leaf lard! (heavens open, angels sing...) that is the much desired belly fat from the pigs. i kept it all separate and kinda froze it until i could give it the attention it deserves.
'backfat' is technically the fat from high on the hog - really! it the fat from the back on the top - it also is much desired by southern cooks ... FC knows about this. if you look at the pic of our roast (plate of food on meat is the problem thread) you can see the thick layer of fat right there. our pigs had about a 2 inch layer of backfat
but heck they are ENTIRELY covered with fat! whoot!
oh man RR had some kind of weird hot dog dish and i turned it off! ick! so we are making savory bread pudding with our leftover whole wheat home made bread, a ton of eggs, a jar of our canned turkey, and ..... pumpkin... YAY!!! hows THAT for dinner!?!? whoot!!!!

A day of shopping...what could be better than that huh? And coffee! Whoo hoo...here in Canada it is Tim Hortons that's the big rave...but I seriuosly like home brew much better!
