I told dh last night that if he made supper, I'd make donuts. He did. I did. I think I got my fix for the next few years...but boy, were they good! I used soft white wheat flour, honey, eggs from my hens, milk from my goats, baking powder, sea salt, and vanilla extract that I made. Oh, and cinnamon and nutmeg. Total yum.
Mmmmmmm!! Recipe, please? :)

I have been eating way too many cookies lately, what's up with that? OK so they are homemade cookies, but still, I can't remember craving them like I have this time.
So I am thinking...if it is homemade, with real ingredients, eaten once in a while for a special treat........

For the record, I was chilly ALL THE TIME lately and realized that I had not put on my ten pounds of insulation for the winter. So I did. I'm toasty now. I am fortunate to be able to go up and down by 10 lbs and it barely shows (when I am dressed! :p ) so here is how I made my donuts. I should cross-post in the recipe section but.....I mixed the wet ingredients and the dry ingredients before I noticed that my chosen recipe was for a donut maker thingy, and I needed to roll these puppies out, sheesh! So I adjusted and added until it would roll, so I am guessing at the following amounts:

3.5-4 c flour (I used freshly ground soft white wheat berries)
3 tsp baking powder
1 tsp sea salt
1 tsp cinnamon
1/2 tsp nutmeg

1/2 c honey (I'd use more next time, maybe, or not, they were good but not real sweet, which I tend to like but most people might not)
2 eggs
1 Tbsp softened butter
1 tsp vanilla
1/2 - 3/4 c milk, kefir, yogurt, buttermilk, etc. to make a firm dough that can be rolled out.

I mixed the wet in one bowl, the dry in another, combined them when the fat (tallow!) was hot. I patted it out quickly on a floured surface and cut it into sticks (a dozen) with a pizza cutter, carefully dropped six of them into the hot fat (big cast iron fry pan with a screen splatter guard on top.) Turn them after a minute....these are better the browner they get, imo.

Serve hot with a dusting of cinnamon sugar, if desired, and hot tea or milk.
