i just placed and order with them this week - they sent it the next and day and yippeee! it got here tout suite!

the best part - they have the blue cheese bacteria for ONLY $7.95...normally its like $30!!! now - it might only be enough for one or two cheese ....but i'd rather start low and make sure it works before sinking $30 into a project.

i am so thrilled with their service - i just had to tell everyone.

Cool! Thanks! BTW, you can put just a tiny, tiny bit of mold powder in your recipe. Most recipes say 1/8 tsp only because it is the smallest! It will grow with the ittiest-bittiest inoculation. It keeps quite well in a tight jar in the freezer, too.

Is blue cheese made from penicillin?

Should people allergic to penicillin avoid blue cheese? Gulp.

I have a lot of strange food reactions, this could explain something to me. I have never avoided blue cheese. But when I was looking up the culture, it very clearly called it penicillium or something like that.

Very cool! Good question about the allergy. DS is also allergic to penicillin. He doesn't care for bleu cheese anyway but it would be a good thing to know because I do intend to make goat's milk bleu cheese someday.

i'm allergic to amoxicillian... but i eat bleu cheese by the pound when i can.

the bacteria i have is called "blue penicillium roqueforti"

so i dunno. we need someone extra smart...

Hmmm, interesting! I'll google. It was amoxicillin that DS reacted to.

Why, thank you Hen, you researched that rather nicely.

In my understanding of medicine, if you are allergic to any "cillin" drug, you should not have any of them. Amoxicillin is what I was allergic to as well, but not anaphylactic shock!

I think I will watch for my typical reactions to food after the next time I consume blue cheese, and I don't think I'll make it. There are so many other cheeses to make. OFG can tell us all about hers and I'll enjoy it vicariously.

I'll eat anyone else's portion of bleu. I adore it!! I have to tackle feta first. I have to have goat mild first. Donki isn't producing much any more and we didn't breed this year.

I'm allergic to all the 'cillins and I do find with bleu cheese.
