Pancake syrup?!? What's on your pancakes?

We rarely do syrup anymore, and then only maple syrup. I weaned the family--grudgingly, on their part--from storebought. We mainly use fruit sauces, jam that was too runny, applesauce and maple syrup.

I had to stop buy real maple syrup a year or so ago. I will not pay the prices they are charging. :rant Only if I had some Maple trees.

I do GF pancakes and waffles for the kids. I make syrup using sugar and maple flavor. Not the healthiest choice but I think better than corn syrup. :sick the pancakes are always full of fruit.

I should try to make some fruit syrups this year. Any good recipes out there?

Wifezilla, my elderly neighbor was showing me her Chia seed and gel stuff in the fridge the other day. do you have any links about it??

Here is my chia jelly recipe. Feel free to switch out the sweetener to whatever you prefer. I wrote this before truvia came on the market and I had a source for erythritol.


12 large frozen strawberries
3 tablespoons chia seeds
2 packets of splenda
1 packet of equal

Place in a bowl and allow frozen strawberries to partially thaw. Slice strawberries and add sweetener. Add chia seeds and stir. Allow strawberries to completely thaw. The chia seeds will absorb the strawberry juice and turn into a gel. Add more seeds if the topping appears to be a bit runny. If it looks too thick, add a few more strawberries.

You can make syrups from many other kinds of trees.
For example, we use birch here in Alaska.
I know walnut trees are an option as well.

Nourishing traditions has excellent syrup recipes in it.

Thanks to you both. i need to do some reading on the Chia seeds. Those little things were really cool.

Bub, I need to did out my NT book. Time for some new recipes.

I use either locally made hickory or maple syrup, or lemon and sugar.

You can make syrup out of hickory? Do you tap them like maples, and how does it taste?
