NCHFP says no for shelf-stable pickled eggs. I make them for the fridge sometimes. My kids' favorite recipe is a pineapple flavor from the link below. Link below also covers food safety for pickled eggs.

My great grandma used to pickle fish! Hers had lemon slices and dill springs in the jar. I hadn't thought about that in years. What is your pickled fish recipe?I used pickled eggs from the same mixture I used for pickling whitefish. They were good, but I left them a little too long in the vinegar and they got really rubbery. Definitely an acquired taste, my DH wouldn't even touch them, lol.
