I chased the phantom "poulet rouge" down the same rabbit-hole for months only to determine that this is simply a marketing ploy put out there by a few ambitious corporate farmer-come-latelys (ahem, NHF) in order to sell their chickens better. Word has it that they are trying to turn the label into a "certification" since they can't get the Label Rouge here in the US like they have in France in order to be able to losen more dollars from their "elite" buyers, excuse me, customers. Just look for any bare-necked heritage breed chicken from a good hatchery, and call it a "poulet rouge". They're the same damn thing.
