Yes, I admit I am a nerd! You said big mouth, not me!!! :lol:

I have to have a notebook because I am like the absent-minded professor. I will make the same mistakes twice because I forget that I tried it before and I didn't like it. I also need to note changes because I never remember! Then I want to re-create something and can't.

My notebook is a purple looseleaf with clear pockets on the front and back cover. I have a recipe in each pocket. I also have those plastic page protecting sleeves inside with my favorite recipes, and blank address labels for labelling jar lids. I like that far better than writing on the lid with a sharpie, as my eyes are so bad. Thick nerd glasses here, too. :cool: The pockets inside each cover are filled with recipes I'd like to try...they have to earn their way into a plastic sheet protecting sleeve.

I think you'll love having your own canned beans! We do. We keep pinto, kidney, garbonzo, and black beans on the shelf. And canned chili and boston baked beans for quick meals. They taste so much better than store bought - and no worries about what's in them.

I prefer to can them in Winter when there's no garden produce to do. I try to do enough to last the year so that I don't have them in Summer during the regular canning season - much to busy then.
