We hang the deer by the horns or with a rope around the neck. This allows the water to drain out of the chest cavity and makes it easier to pull the hide off. With the legs shortened, it is easier to work with them that way.I read to wipe the inside with a damp rag because water causes spoilage. By the way, if you cut off the legs at the knees, I’m curious how you would hang the deer for skinning. Good comment though. Thanx.
Some people split the chest open, we don't bother to do that. Which is why we use a couple buckets of water to rinse out the inside. It all drains out.
